Slow Cooked Chicken Piccata

2-3 teaspoons of grated lemon peel

3 tablespoons of fresh lemon juice

3 tablespoons of extra virgin olive oil

2 tablespoons of capers

¼ teaspoon of black pepper

1 teaspoon of Italian seasoning

4 boneless skinless chicken breasts

1 head of romaine lettuce, thinly sliced

¼ cup of Parmesan


- In a slow cooker, place the lemon peel, lemon juice, oil, capers, pepper, and seasoning and stir well. Coat the chicken. Cover and cook on low for 1-1.5 hours.

- Divide the romaine between 4 plates and top with 1 tablespoon of cheese and juices from the slow cooker.
