This is a super easy and delicious recipe to spice up your weekday lunches and dinners! Make sure you prepare the marinade several hours before and refrigerate for 2-3 hours for optimal flavor.
Makes about 2 servings.
Ingredients
¼ cup of tamari sauce (low sodium) or coconut aminos
2 tablespoons raw honey
1 tablespoon rice vinegar
1 tablespoon ground ginger
¼ teaspoon cayenne pepper
1/8 teaspoon freshly ground black pepper
2 large salmon fillets
Optional: Furikake seasoning
Instructions
Preheat the oven to 425 and line a baking sheet with foil
Combine the tamari, honey, vinegar, ginger, cayenne, and black pepper in a large bowl
Add the salmon, turning the pieces over to marinade. Cover the bowl and refrigerate for 2-3 hours
Place the salmon in a roasting pan, skin side down, and bake in the oven for 15-20 mins or until it flakes easily
Top with Furikake seasoning for extra flavor!
** Instead of tamari, I sometimes use coconut aminos. Coconut aminos are very low in sodium and soy-free (Tamari too!). My favorite brands include Trader Joe's, Coconut Secret, and Braggs!
** Opt for wild-caught salmon rather than farm-raised. There is a price difference but it is better for you and for the environment!
