Summer is almost over but there is still time to try this refreshing salad!
With refreshing strawberries, roasted chickpeas, creamy avocado, bitter arugula, and carrots, this is a balanced plant-based meal that is sure to keep you nourished for hours!
3 tbsps Tahini
3 tbsps Lemon Juice
2 tbsps Extra Virgin Olive Oil
1 tsp Maple Syrup
1/3 cup Water
1/4 tsp Sea Salt
6 cups Arugula
2 Carrot (large, shredded)
1 cup Strawberries (halved)
1 cup Chickpeas (roasted)
Add tahini, lemon juice, extra virgin olive oil, maple syrup, water, and sea salt to a jar. Cover with lid and shake well until smooth and creamy.
Divide arugula between bowls and top with shredded carrot, strawberries, avocado and chickpeas. Drizzle with tahini dressing. Serve and enjoy!
