Clinging on to Summer? Try this Recipe!

Summer is almost over but there is still time to try this refreshing salad!

With refreshing strawberries, roasted chickpeas, creamy avocado, bitter arugula, and carrots, this is a balanced plant-based meal that is sure to keep you nourished for hours!

avacado and strawberry healthy diet

  • 3 tbsps Tahini

  • 3 tbsps Lemon Juice

  • 2 tbsps Extra Virgin Olive Oil

  • 1 tsp Maple Syrup

  • 1/3 cup Water

  • 1/4 tsp Sea Salt

  • 6 cups Arugula

  • 2 Carrot (large, shredded)

  • 1 cup Strawberries (halved)

  • 2 Avocado

  • 1 cup Chickpeas (roasted)


  1. Add tahini, lemon juice, extra virgin olive oil, maple syrup, water, and sea salt to a jar. Cover with lid and shake well until smooth and creamy.

  2. Divide arugula between bowls and top with shredded carrot, strawberries, avocado and chickpeas. Drizzle with tahini dressing. Serve and enjoy!
