Massaged Kale Salad


1 bunch of kale chopped

2 tablespoons of extra virgin olive oil

¼ teaspoon of ground cumin or freshly ground black pepper or ½ teaspoon of cumin seeds

¼ cup of green or black olives

¼ cup of nuts

¼ cup of crumbled feta cheese or parmesan

¼ cup of avocado

2 cooked chicken breasts, shrimp, or tofu, cubed or sliced


- In a large bowl place the kale, oil, and ground cumin or pepper or cumin seeds. Using clean hands, rub the oil into the kale leaves, gently squeezing the leaves to soften them.

Sprinkle on the olives, nuts, cheese, and avocado. Top with chicken, shrimp, or tofu
