Coconut Joy Pudding

Ingredients

1 cup of plain unsweetened coconut milk

⅔ cup of plain or vanilla whey protein powder

⅓ cup of chia seeds

1 cup of cold water

¼ cup + 4 tablespoons of shredded unsweetened coconut

4 tablespoons of chopped 70% dark chocolate



Instructions

- In a large bowl, whisk together the coconut milk, protein powder, chia seeds, water, and ¼ cup of shredded coconut. Combine well. Set out 4 parfait glasses and add coconut mixture to each.

- Sprinkle each with 1 tablespoon of shredded coconut and 1 tablespoon of chocolate. Place in fridge one hour before serving.
