Vanilla Spice Quinoa Breakfast Cereal

Ingredients

⅓ cup of dry quinoa

2 cups of water

⅔ cups of plain or vanilla whey protein powder

½ cup of shredded unsweetened coconut

¼ cup of hemp seeds

1 teaspoon of pure vanilla extract

1 teaspoon of ground cinnamon

¼ teaspoon of ground cardamom

2 tablespoons of ground flaxseeds or chia seeds

1 cup of fresh or frozen raspberries or blueberries

¼ cup of dried walnuts



Instructions


- In a large saucepan, place the quinoa and water and bring to a boil over high heat. Reduce to a simmer and cook for 15-20 minutes or until the quinoa is tender and the centers of the grains are translucent.

- Stir in the protein powder, coconut, hemp seeds, vanilla, cinnamon, and cardamom. Stir in the flaxseeds or chia seeds. If the mixture is too thick, add another ¼ to ½ cup of water to reach the desired consistency. Divide the quinoa mixture into 4 bowls and top each with ¼ cup of berries and 1 tablespoon of walnuts.
